"I can’t stand the image some chefs are cultivating. Our job isn’t the hardest on the planet. Yes, it’s tough. Yes, you have to make some painful compromises. But we’re no emergency physicians. People’s lives don’t depend on what we’re doing."

Jan Hartwig was, until very recently, head chef at Atelier, Munich’s most decorated restaurant. Under his watch, the restaurant was consistently awarded three Michelin stars and 19 Gault Millau points. He is 38 years old. He is eloquent and refreshingly unpretentious, despite the media attention chefs of his calibre receive these days.

Jan Hartwig focuses on local and seasonal products for a light and creative cuisine. He is constantly striving to stay true to a sustainable way of cooking with his choice of products and his methods. Based on classichaute cuisine, he conjures up contemporary and modern creations, but without unnecessary extras. The product always remains apriority in his kitchen. In addition, it’sflavour and an exciting culinary experience that are at the forefront of his cuisine.

Having trained with the most prominent chefs in Germany, Hartwig’s background in the culinary arts is almost unrivalled and can be seen and enjoyed at his temporary concept restaurant  "JAN" at the premises of Porzellan Manufaktur Nymphenburg before launching his own restaurant in Munich in summer 2022. The location at the northern Schlossrondell offers exactly the setting that the talented star chef envisioned for his new restaurant: An intimate ambience in which he can cook in direct exchange with his maximum of 16 guests. Here, what belongs together comes together - a great dish on a beautiful plate.
