Rui Silvestre *

Rui Silvestre was born in Valongo, in the north of Portugal, but has been living in the Algarve since he was 10 years old.
To gain motivation for new dishes and gastronomic development and to discover other cultures and tastes he worked at French, Swiss and Hungarian restaurants for 7 years.
The highlight of his culinary experiences abroad was in France at three Michelin star restaurant Le Castellet of Christophe Bacquié.
In 2015 Rui attained his first Michelin Star becoming the youngest Portuguese chef ever (at 29 years of age) to win this much coveted award.
By using French techniques and fusing unlikely flavours Rui loves to merge the finest products from both earth and sea, in an innovative way which evokes all the senses.
Rui’s aim is to perfectly preserve the authentic taste of the exceptional local ingredients, until the dish reaches your table. Every dish expresses the richness of each ingredient around which it was built.
